Chef’s Table is one of my favorite documentary series. It gets to the core of the chefs behind some of the top restaurants around the world. The documentary series created a new spin off focusing on BBQ around the world. BBQ looks different in different parts of the world, but there is a common feature of fire. The people who master this type of cooking are often given the title of Pit-Master instead of Chef as they have a skill set that a Chef can’t match. Pit-Masters have an understanding of fire and food.
BBQ is big in Texas. We smoke everything you can find on a farm. We will judge you if you screw it up. We also could eat it everyday of the week. Texans love BBQ with a passion. However if you don’t own a professional grade smoker, you probably are not smoking your own meats. What if I told you that there is a way to smoke a chicken on your grill in the back yard? ‘Cause there is!
I am a BBQ snob. It may have to do with growing up in Texas, but I think it more has to do with being a foodie. It is hard to impress with me with subpar BBQ so when I say that this is the best BBQ ever, you can trust my words. Now if you have never heard of Pecan Lodge then I feel sorry for you. It has been in D magazines top 50 restaurants for many years, featured on Food Network, Dallas local legend, and much more.
